Well, I chose the organic farms that grow grains for us. And I personally attend to each of the three stages of distillation - especially small batches that are distilled in a traditional pot still. The final stage - where we add the purified water - is among the most critical. I don't entrust that to anyone but myself. Finally, we put the liquid into the bottles, the labels are applied - each one is stamped with a unique number. The whole process is laborious time-consuming and challenging at times, but I wouldn't have it any other way. It's what makes artisanal vodka special.
